Teriyaki chicken (照り焼きチキン) is one of the most popular Japanese food in all over the world!!
I made this dish so many times, and finally developed this recipe. It's easy!! There is no professional technique or anything required!!!
[Serving] 2-3 serves
[Prep time] 10 mins *(Doesn't include the time for soaking chicken and kombu)
[Cook time] 10-20 mins
[Storage] Sauce: 2 weeks in a fridge

[Ingredients] (GRAM)
-Chicken thigh 500g
-Bread flour some
[Brine]
-Water 500ml
-Sugar 1tsp (5g)
-*Salt 1tsp (5g)
*If you use kombu salt, even better
(Blitz 4g kombu and 50g salt in a food processor)
[Teriyaki sauce]
-Kombu (Dried kelp) 2g
-*Water 50ml
-Sake 2tbsp (30ml)
-Mirin 8tbsp (120ml)
-Sugar 1tsp (5g)
-Soy sauce 80ml
-Corn flour 2tsp (6g)
-*Water 1tbsp (15ml)
*Or use 4tbsp (60ml) of water instead of prepping 50ml + 15ml, and then you can just mix all together except soy sauce.

-Chicken thigh 1.1lb
-Bread flour some
[Brine]
-Water 17.6oz
-Sugar 1tsp (0.2oz)
-*Salt 1tsp (0.2oz)
*If you use kombu salt, even better
(Blitz 0.15oz kombu and 1.7oz salt in a food processor)
[Teriyaki sauce]
-Kombu (Dried kelp) 0.07oz
-*Water 1.75oz
-Sake 2tbsp (1oz)
-Mirin 8tbsp (4.2oz)
-Sugar 1tsp (0.2oz)
-Soy sauce 2.8oz
-Corn flour 2tsp (0.2oz)
-*Water 1tbsp (0.5oz)
*Or use 4tbsp (2.12oz) of water instead of prepping 50ml + 15ml, and then you can just mix all together except soy sauce.

[Instruction]
[Chapter1: Prepare chicken]
Mix water, sugar, salt to make brine
Soak chicken for 1 hour to 24 hours
[Chapter2: Teriyaki sauce recipe]
Soak kombu, water, sake, mirin, sugar for 1hour to overnight
Mix water and corn flour
Combine those together, heat on low to medium heat
Boil 30 seconds to burn the alcohol
Remove from the heat, add soy sauce
[Chapter3: Prepare to cook]
Strain and pat dry the chicken
Coat with bread flour. Keep on a plate as skin side up
[Chapter4: Cook chicken]
On a cold pan, pour generous splash of vege oil
Place chicken as skin side down
Put aluminium foil on top. Leave some space on the edges
Cook on medium high heat for 4-5 mins
Once the skin is brown, discard the fat
Remove from the heat. Rest 3-4 mins with the foil
Remove foil, flip chicken
Cook the other side on medium heat
Once it starts to sizzle, pour the sauce
Once the teriyaki sauce is reheated, done.
