Okonomiyaki | Japanese Savory Pancake

Okonomiyaki (お好み焼き) is one of the most popular street food in Japan.

It's pretty easy to make it. And you don't need any expensive ingredients!!


My version has really tasty garlic bits on top. And a little bit of the secret ingredients in he batter. It really brings up the flavour to the next level!

[Prep time] 20 mins (Need to rest the batter 1-2hours)

[Cook time] 15 mins

[Storage] Sauce: 2 weeks in a fridge

[Ingredients] (GRAM)


-Cabbage 200g

-Scallion 40g

-Cheddar cheese 50g

-Sliced pork belly some


(Kombu salt)

-Salt 50g

-Kombu 4g


(Batter)

-Water 200ml

-All purpose flour 200g

-Egg 2 (100-110g)

-Kombu salt 3/4tsp (5g)

-Sugar 1tsp (5g)

-Soy sauce 1tsp (5ml)

-Silken Tofu 150g


(Sauce)

-Soy sauce 2tbsp (30ml)

-Oyster sauce 2tbsp (40g)

-BBQ sauce 4tbsp (76g)


(Garlic bits / oil)

-Garlic (as peeled) 30g

-Vegetable oil 100ml


(Topping)

-Japanese mayo

-Bonito flakes


 

[Ingredients] (OUNCE)


-Cabbage 7oz

-Scallion 1.4oz

-Cheddar cheese 1.75oz

-Sliced pork belly some


(Kombu salt)

-Salt 1.7oz

-Kombu (Dried kelp) 0.1oz


(Batter)

-Water 7oz

-All purpose flour 7.05oz

-Egg 2 (3.5-3.9oz)

-Kombu salt 3/4tsp (0.2oz)

-Sugar 1tsp (0.2oz)

-Soy sauce 1tsp (0.2oz)

-Silken Tofu 5.3oz


(Sauce)

-Soy sauce 2tbsp (0.6oz)

-Oyster sauce 2tbsp (1.4oz)

-BBQ sauce 4tbsp (2.7oz)


(Garlic bits / oil)

-Garlic (as peeled) 1oz

-Vegetable oil 3.5oz


(Topping)

-Japanese mayo

-Bonito flakes

[Instruction]


[Chapter1:Prepare ingredients]

  1. Shred cabbage, chop scallion, garlic. Grate cheese

  2. Blitz kombu and salt


[Chapter2:Batter]

  1. Mix everything on the list

  2. Add the prepped stuff except the garlic

  3. Rest in a fridge for 1-2hrs (Best to be overnight)


[Chapter3:Sauce]

Mix everything on the list



[Chapter4:Garlic]

  1. Cold pan. Garlic and vege oil. Medium heat

  2. Keep mixing until light brown

  3. Strain. Sprinkle a pinch of kombu salt


[Chapter5:Cook]

  1. Hot pan. Generous garlic oil. Medium heat

  2. Pour the batter. Don't make it too big

  3. Shake the pan sometime

  4. Pork belly on. Few pinch of kombu salt & black pepper

  5. Lid on. Steam 3mins

  6. Strain the oil. Flip

  7. Colour the other side.

  8. Garnish with mayo, sauce, garlic, bonito
