Egg Fried Rice | Japanese street food style

It's always good to have Fried rice. And this is basic and authentic Japanese style fried rice recipe. It's a traditional recipe with lot of good tips and modern update. It's good to serve by itself, or as a side dish. So have a try!!

[Ingredients] (GRAM)


-Cold rice 240g

-Salt 2g (1/3tsp)

-Black pepper some


-Green onion 40g

-Garlic 25g (as peeled)

-Egg 2 each


-Sake | Ryorishu 7.5ml (1/2tbsp)

-Soy sauce 5ml (1tsp)


(To cook rice)

-Short grain rice 500g (measured before washed)

-Water 550ml

-Cooking oil 15ml (1tbsp)

-Cold rice 8.47oz

-Salt 0.07oz (1/3tsp)

-Black pepper some


-Green onion 1.41oz

-Garlic 0.88oz (as peeled)

-Egg 2 each


-Sake | Ryorishu 0.26oz (1/2tbsp)

-Soy sauce 0.18oz (1tsp)


(To cook rice)

-Short grain rice 17.64oz (measured before washed)

-Water 19.4oz

-Cooking oil 0.53oz (1tbsp)

[Instruction]


[Chapter 1 : Prepare ingredients]

  1. Chop green onion. Keep the leaf and stem seperate

  2. Mince garlic

  3. Whisk 2 egg with a pinch of salt


[Chapter 2 : Tips for the rice]

  1. Follow the amount in the recipe to cook the rice

  2. Once it's cooked and cooled, portion into 240g (8.47oz)

  3. Chill in a fridge or freezer overnight

  4. Crumble it. Then season with salt and pepper

*Make sure the rice is cooled before portioning. If you wrap hot rice, the steam will make the rice soggy.



[Chapter 3 : Fried garlic]

  1. On a cold pan, pour 3tbsp of cooking oil (45ml)

  2. Add minced garlic. Cook on medium low heat for 4-5mins

  3. Once it's light brown, strain it

  4. Put the garlic on a paper towel, then add a pinch of salt

  5. Keep the cooking oil. We use it for cooking the rice


[Chapter 4 : Cooking part]

  1. On the same pan, pour about 1.5tbsp (22ml) of the garlic oil

  2. Heat the pan with the highest heat you can.

  3. Make sure the pan is SMOKING HOT

  4. Add the green onion stem

  5. Cook few seconds, once it's fragrant, add the egg

  6. Once the egg is cooked 60-70%, add the rice

  7. Keep the pan right on top of the fire, so the pan won't get cold

  8. Once everything is mixed, you can shake your pan

  9. Add Sake. Give it a mix

  10. Add the fried garlic and green onion leaf

  11. Give it a mix, then pour the soy sauce directly on the pan

  12. Burn the soy sauce for a bit, and give it a mix

  13. Serve
