Chicken and Shrimp Chow Mein

Chow mein is quite similar to Japanese Yakisoba.

They both are a type of stir fried noodle. It's easy and delicious.


In this recipe, I cook the veggies, meats, and noodles separately. That way we can get the very best result of the each ingredients, and it makes the whole dish to the next level!!


Chicken and Shrimp Chow Mein

[Ingredients] (GRAM)


-Scallion 60g

-Carrot 60g

-Bean sprout 150g

-Garlic (as peeled) 10g

-Ginger (as peeled) 5g

-Red cayenne Chilli 15g


-Chow mein Noodle 200g

-Kombu Salt 1/2tsp (2.5g)

-Sesame oil: A little drizzle

-Sake 0.5tbsp (7.5ml)


-Chicken thigh 200g

-Prawn 100g

-Kombu salt 1/3tsp (1.5g)

-Black pepper some

-The sauce 0.5tbsp (7.5ml)


[The sauce]

-Soy sauce 1tbsp (15ml)

-Oyster sauce 1tbsp (20g)

-Sesame oil 2tsp (10ml)

-Sugar 0.5tbsp (7.5g)

-Corn flour / starch 0.5tbsp (5g)


[Kombu salt]

-Kombu 4g

-Salt 50g


 

[Ingredients] (OUNCE)


-Scallion 2.1oz

-Carrot 2.1oz

-Bean sprout 5.3oz

-Garlic (as peeled) 0.35oz

-Ginger (as peeled) 0.2oz

-Red cayenne Chilli 0.5oz


-Chow mein Noodle 7oz

-Kombu Salt 1/2tsp (0.1oz)

-Sesame oil: A little drizzle

-Sake 0.5tbsp (0.25oz)


-Chicken thigh 0.45lb

-Prawn 0.22lb

-Kombu salt 1/3tsp (0.05oz)

-Black pepper some

-The sauce 0.5tbsp (0.25oz)


[The sauce]

-Soy sauce 1tbsp (0.5oz)

-Oyster sauce 1tbsp (0.7oz)

-Sesame oil 2tsp (0.35oz)

-Sugar 0.5tbsp (0.25oz)

-Corn flour / starch 0.5tbsp (0.2oz)


[Kombu salt]

-Kombu 0.15oz

-Salt 1.75oz

[Instruction]


[Chapter1: Prepare ingredients]

  1. Cut scallion into 2-3cm (0.8-1.2inch), keep the stem and leaf seperate.

  2. Lightly wash bean sprout (If it's older than 1 day).

  3. Cut carrot very thinly. Mince garlic and ginger.

  4. MInce chilli. Remove the seeds if you don't like spicy foods.

  5. Cut chicken into bite size. Set aside with the prawn.


[Chapter2: Seasoning and sauce]

  1. Blitz kombu and salt to make kombu salt.

  2. For the sauce, mix everything on the ingredients list.

  3. Season the chicken and prawn with kombu salt and black pepper.

  4. Add 1/2tbsp of the sauce. Mix, and set aside.


[Chapter3: Prepare Noodle]

  1. Follow the packet instruction to prepare the noodle.

  2. Season with 1/2tsp of kombu salt and a drizzle of sesame oil.

  3. Set aside.


[Chapter4: Cook Veggies]

  1. On a cold pan, add 2.5tbsp (37ml) (1.3oz) of veg oil.

  2. Add garlic, ginger, and chilli. Cook on low heat.

  3. Once it smells aromatic, add carrot. Medium heat.

  4. Once the carrot become to your liking, add the scallion stem.

  5. Cook about 30 seconds, then add bean sprout and scallion leaf.

  6. Add a sprinkle of kombu salt. Cook on high heat for 30 seconds.

  7. Transfer to a plate. set aside.


[Chapter5: Cook proteins]

  1. Heat the same pan on medium high heat. Add the prawn and chicken.

  2. If the pan was dry, add bit more oil

  3. Once it's coloured, flip it. Cook 20-30 seconds.

  4. Add sake. Once it's evaporated, transfer to the plate with the veggies.

  5. If the pan still had some brown bits, add a splash of water.

  6. Scrape all the brown bits, and add to the same plate


[Chapter6: Finish Chow mein]

  1. Heat the same pan on high heat, add more oil. Then add the noodle

  2. Spread the noodle on the pan, then wait until coloured.

  3. When the bottom become brown, add all the other stuff (If the noodle didn't get colour, add bit more oil, and wait)

  4. Add the sauce too.

  5. Give it a quick mix, and serve.
