Soba Noodle Recipe 4 ways

There are lot of ways to enjoy soba noodles.

But these are my top 4 favourites!! They all aren't difficult, and I especially recommend the spicy salad!!


It's a great refreshing salad for summer, or could be enjoyed as a appetiser or side dishes for any seasons!!


Soba Noodle recipe 4 ways

[Prep time] 15-20 mins each dishes (Does not include time to soak Kombu)

[Cook time] 10-25 mins each dishes

[Storage] Kaeshi: 3 weeks in a fridge

[Ingredients]


(Kaeshi) 3-4 serves

-Kombu 2g

-Soy sauce 300ml

-Sugar 4tbsp (60g)

-Mirin 4tbsp (60ml)


(Dashi) 3-4 serves

-Water 1000ml

-Kombu 6g

-Bonito flake 50g



(Kake-soba broth) 1 serve

-Kaeshi 50ml

-Dashi 250ml


(Zaru-soba) 1 serve

-Kaeshi 1tbsp (15ml)

-Dashi 3tbsp (45ml)

-Ginger some

-Nori some


(Chicken soba) 1serve

-Chicken thigh 200g

-Scallion 1

-Salt 1/2tsp (2.5g)

-Kaeshi 2tbsp (30ml)

-Dashi 210ml



(Spicy salad) 1 serve

-Sliced pork belly 170g

-Salt 1/3tsp (1.7g)

-Sake 1tsp (5ml)

-Your favourite veggies


-Kaeshi 3tbsp (45ml)

-Dashi 4tbsp (60ml)

-Sesame oil 1tsp (5ml)

-Chilli oil 1/2tsp (2.5ml)

Ginger 2-3g (as peeled)


 

[Ingredients] (OUNCE)



(Kaeshi) 3-4 serves

-Kombu 0.07oz

-Soy sauce 10oz

-Sugar 4tbsp (2oz)

-Mirin 4tbsp (2oz)


(Dashi) 3-4 serves

-Water 35.2oz

-Kombu 0.2oz

-Bonito flake 1.8oz



(Kake-soba broth) 1 serve

-Kaeshi 1.7oz

-Dashi 8.8oz


(Saru-soba) 1 serve

-Kaeshi 1tbsp (0.5oz)

-Dashi 3tbsp (1.6oz)

-Ginger some

-Nori some


(Chicken soba) 1serve

-Chicken thigh 0.45lb

-Salt 1/2tsp (0.1oz)

-Scallion 1

-Kaeshi 2tbsp (1oz)

-Dashi 7.4oz



(Spicy salad) 1 serve

-Sliced pork belly 0.37oz

-Salt 1/3tsp (0.06oz)

-Sake 1tsp (0.2oz)

-Your favourite veggies


-Kaeshi 3tbsp (1.6oz)

-Dashi 4tbsp (2oz)

-Sesame oil 1tsp (0.2oz)

-Chilli oil 1/2tsp (0.1oz)

-Ginger 0.07-0.11oz (as peeled)

0:00 Prepare Soba

1:13 Kaeshi (Flavour base)

[Instruction]


[Chapter1:Prepare Soba]

  1. Boil soba with medium high heat

  2. Rinse in water

  3. Reheat 10-15 sec if you serve hot


[Chapter2: Kaeshi (Flavour base)]

  1. Soak Kombu and soy sauce 1hr to overnight

  2. Mix everything

  3. Low heat until just before boiling

  4. Chill completely


[Chapter3: Ichiban Dashi]

  1. Soak water and kombu 1hr to overnight

  2. Medium heat until just before boiling

  3. Add bonito flakes, infuse 5mins

  4. Strain naturally


[Chapter4: Kake soba]

  1. Warm the Dashi and Kaeshi

  2. Serve with hot Soba


[Chapter5: Zaru soba]

  1. Mix the Dashi and Kaeshi

  2. Serve with cold Soba, grated ginger, Nori


[Chapter6: Chicken Soba]

  1. Cut chicken and season

  2. Cut scallion

  3. Sear it on a hot pan. Medium heat. A pinch of salt

  4. Sear the chicken on hot pan. Med-high heat with a lid

  5. Cook 2-3 mins on both sides

  6. Add and warm the broth

  7. Serve with hot soba, poached egg (Optional)


[Chapter7: Spicy salad]

  1. Mix all the wet stuff and ginger. Dressing done

  2. Cut your veggies

  3. Sear the pork on a hot pan. Med-high heat

  4. The salt in. cook through

  5. Sake in. Gas off. Strain.

  6. Plate nicely.
