Yakitori Rice Bowl [Japanese Chicken rice bowl]

Yakitori is a Japanese street food.

Basically, it's a chicken skewer with some green onion.

However, it is so delicious to enjoy as a rice bowl too!! Here is how!!

[Ingredients] (GRAM)


-Chicken thigh 250g

-Sake 1/2tbsp (7.5ml)

-Salt 1/2tsp (2.5g)


-Green onion stem 50g

-Egg yolk or poached egg (Optional) 1 each

-Black pepper some



(Sauce)

-Soy sauce 1tbsp (15ml)

-Sake 1tbsp (15ml)

-Mirin 1tbsp (15ml)

-Water 1tbsp (15ml)

-Sugar 0.5tbsp (7.5g)

-Corn flour / starch 1/2tsp (1g)


 

[Ingredients] (OUNCE)


-Chicken thigh 0.55lb

-Sake 1/2tbsp (0.26oz)

-Salt 1/2tsp (0.1oz)


-Scallion stem 1.76oz

-Egg yolk or poached egg (Optional) 1 each

-Black pepper some



(Sauce)

-Soy sauce 1tbsp (0.5ozl)

-Sake 1tbsp (0.5oz)

-Mirin 1tbsp (0.5oz)

-Water 1tbsp (0.5oz)

-Sugar 0.5tbsp (0.26oz)

-Corn flour / starch 1/2tsp (0.04oz)

[Instruction]


[Chapter1: Prepare ingredients]

  1. Cut Green onion into 3-4cm

  2. Cut chicken into bite size

  3. Marinate the chicken with salt and sake. Set aside


[Chapter2: Sauce]

  1. Mix everything, done


[Chapter3: Cook Green onion]

  1. Heat a small pan on medium heat. Put some cooking oil.

  2. Cook the green onion until both sides are coloured

  3. Touch it. Once the inside is slightly soft, remove from the pan

  4. Set it aside


[Chapter4: Cook chicken]

  1. Heat the same pan with medium high heat. Put a bit of oil again

  2. Place the chicken skin side down. Crack some black pepper on it

  3. Once the skin looks brown, flip it

  4. Turn down to low heat, then add the sauce

  5. Place a lid on. Cook 2.5 mins

  6. Open the lid, add the green onion, turn off the heat

  7. Give it a quick mix

  1. Don't put too much sauce on the bottom.

  2. Make the centre of the plate a bit higher.

  3. Pour most of the sauce from the top. It makes the chicken looks shiny and moist.
