Napolitan (ナポリタン) doesn't mean it's an Italian dish.
This is a classic cafe menu in Japan. (also known as Ketchup pasta / spaghetti)
Usually it's made with normal sausage, but my version uses chorizo to give it an extra heat and umami!! It's quick and easy one! So you can cook regularly!!

[Ingredients] (GRAM)
-Chorizo 1 (120g)
-Mushroom 70g
-Capsicum 100g
-Onion 1/2 (90g)
-Garlic (mince) 15g
-Parmesan cheese some
-Tomato ketchup 45g
-Pure cream 1tbsp (15ml)
(Pasta)
-Kombu (Dried kelp) 5g
-Water 1000ml +1000ml
-Salt 1tbsp (15g)
-Spaghetti 100g

-Chorizo 1 (0.26lb)
-Mushroom 2.5oz
-Capsicum 3.5oz
-Onion 1/2 (3.2oz)
-Garlic (mince) 0.5oz
-Parmesan cheese some
-Tomato ketchup 1.6oz
-Pure cream 1tbsp (0.5oz)
(Pasta)
-Kombu (Dried kelp) 0.2oz
-Water 35.2oz +35.2oz
-Salt 1tbsp (0.5oz)
-Spaghetti 3.5oz

[Chapter1: Prepare ingredients]
Cut chorizo and veggies according to the video instruction
[Chapter2: Set up the pot]
Soak kombu and 1000ml water for 1hr to over night
Pour the stuff in (pasta) list except the spaghetti, boil
[Chapter3: Mushroom]
Hot pan, generous amount vege oil, high heat
Mushroom in. A pinch of salt. Brown both side
Set aside on a plate
[Chapter4: Chorizo]
Same pan, high heat
Sear 1 side of chorizo until coloured
Set aside on a plate
[Chapter5: Pan fry]
Same pan, medium heat, bit of oil
Onion in. A pinch of salt
Once it starts to be softened, add garlic
When the garlic become brown, add capsicum
Cook the capsicum to your liking
Add ketchup, chorizo and mushroom
Start boiling pasta in the kombu salted water (dashi)
Cook 30 seconds to 1 mins, then add cream
Once mixed, gas off until 1 mins before the pasta is ready
Add the pasta and a bit of the dashi.
Gas off immedietely. Lightly mix, done mate!!
Sprinkle the cheese, adding Tabasco is also great too!!
