[Chapter 1 : prepare Ingredients]
Chop cabbage and green onion into small chunks. Don't make it too big. It'll be undercooked.
Slice pork belly into bite size.
[Chapter 2 : Sauce]
Mix everything. Done.
[Chapter 3 : Batter]
Mix everything except flour, tofu, cheese
Add flour, then mix.
Add tofu, then mix.
Add the veggies and cheese, then mix. Done.
*If you have time, you can rest the batter in a fridge for 1hour to overnight.
While resting, enzyme in the flour develop more umami. So quality of the flour matters.
[Chapter 4 : Cook Okonomiyaki]
Heat a pan on medium heat with generous splash of cooking oil.
Cook the batter. Don't make a huge one. It'll be too hard to flip later.
Swirl the batter around occasionally. It helps even caramelisation.
Place some pork belly. Add some salt & pepper.
Lid on. Steam cook for 3mins
Strain the fat if it's too much.
Flip it. And cook until the pork become brown and crispy.
Put a big drop of Japanese mayo and Okonomiyaki sauce.
Sprinkle some bonito flake, and serve.
