Mazesoba | Soupless Ramen Noodle

Quick noodle recipe is always a lifesaver!!

This recipe is pretty quick but the taste is amazing!! The amount of chilli isn't too much on this recipe. So you can adjust to your liking. Hope you'll give it a try!!

[Ingredients] (GRAM)


-Ramen or Hokkien noodle 200g

-Sesame oil 1/2tsp (2.5ml)

-Pork Mince 200g

-Salt 1/4tsp (1.25g)

-Back pepper some


-Green onion 50g

-Garlic 25g

-Ginger 15g

-Chilli 10g

-Sake | Ryorishu 1tbsp (15ml)

-Fried egg 1 (Optional)


[Sauce]

-Water 4tbsp (60ml)

-Dashi powder 1/2tsp (2.5g)

-Corn flour 1/2tsp (2g)

-Oyster sauce 1tsp (10g)

-Soy sauce 1tsp (5ml)

-Sugar 1tsp (5g)

-Sesame oil 1/2 tsp (2.5ml)


 

[Ingredients] (OUNCE)


-Ramen or Hokkien noodle 7.05oz

-Sesame oil 1/2tsp (0.09oz)


-Pork Mince 0.44lb (7.05oz)

-Salt 1/4tsp (0.04oz)

-Back pepper some


-Green onion 1.76oz

-Garlic 0.88oz

-Ginger 0.53oz

-Chilli 0.35oz

-Sake | Ryorishu 1tbsp (0.53oz)

-Fried egg 1 (Optional)


[Sauce]

-Water 4tbsp (2.12oz)

-Dashi powder 1/2tsp (0.09oz)

-Corn flour 1/2tsp (0.07oz)

-Oyster sauce 1tsp (0.35oz)

-Soy sauce 1tsp (0.18oz)

-Sugar 1tsp (0.18oz)

-Sesame oil 1/2 tsp (0.09oz)

[Instruction]


[Chapter 1 : Prepare ingredients]

  1. Chop green onion as thin as you can

  2. Mince garlic and ginger

  3. Chop chilli (Remove seeds if you are sensitive with the heat)

  4. Cut Nori into thin strips (You can buy pre-cut ones)

  5. Weigh pork mince


[Chapter 2 : The sauce]

  1. Mix everything. Done


[Chapter 3 : Cooking part ]

  1. Add 30ml (2tbsp) of cooking oil to a cold pan

  2. Add garlic, ginger, chilli. Heat on medium heat

  3. Once it become fragrant, add the pork

  4. Turn up to high heat. Cook until the pork is white

  5. Keep mixing, so the veggies won't burn

  6. Add Sake. Cook 20 sec to burn off the alcohol

  7. Add green onion. Cook until it's soft

  8. Add 1/2 of the Nori. Give it a quick mix

  9. Mix the sauce, then add to the pork

  10. Boil it, then remove from heat, set aside

  11. Meanwhile, cook the noodle according to the packet instruction

  12. Add sesame oil to the noodle, give it a mix

  13. Plate it, then reheat the pork

  14. Put it all together, sprinkle the rest of the Nori

  15. Add fried egg on top (Optional, but highly recommended)

  16. Serve
